Family secret revealed – Aberdeen lifestyle photographer

Have you ever had a meal or a cake that you make that everyone just seem to love? I do and it is our family apple cake. Growing up and we were expecting visitors my parents often made an apple cake, it was easy to make and a favourite with everyone. In the UK the cake has also become a favourite with a lot of people and I am often asked for the recipe so I thought I would share the secret.
Growing up we made this with normal flour but since one of my children was diagnosed with Coeliac this has been one of those receipts where you can swap the ingrediants containing gluten with gluten free ingredients. I have found this to be the case with most cakes where you use similar method.
APPLE CAKE
200gr (7.1oz) Margarine (I use Stork in the UK)
200gr (7.1oz) Sugar
4 eggs
170gr (6oz) flour
1ts baking power
Cinnamon and Sugar to sprinkle
1-3 apples depending on size
24 or 26 cm diameter baking tin
Bake in the middle of the owen at 180 degrees celcius for 45-60 minutes.
Add margarine and sugar into the mixing bowl and blend well until it is a nice white mixture. Add the eggs one by one allowing the mixture to blend well between each egg. Add all the dry ingredients.
Line the cake tin with baking paper and add the mixture. Once mixture is in the tin sprinkle cinnamon and sugar on top.
Peal, remove the centre and cut apples into boat shapes. Put the apples into the mixtures and once done even out the mixture on top and add again sprinkle some cinnamon and sugar on top. I find that adding a layer of cinnamon and sugar before adding the sliced apple boats just add a bit more flavour to the cake.
